Lemon Sole

Lemon sole belongs to the dab family and is related to the FLOUNDER and PLAICE. It is a flat fish, resembling a Dover sole in shape but smaller in size and not as fine in texture and flavour. It is found in abundance in the English Channel from

December to March.

All recipes using sole or brill can be made with lemon sole.
