A refreshing summer drink, Lemon Balm and Orange Drink looks as cooling and delicious as it tastes.
2 pints fresh orange juice juice of 2 lemons 2 oz. castor sugar 2 sprigs lemon balm leaves, bruised 10 fl. oz. soda water, chilled a few lemon balm leaves (for garnish)
In a tall glass jug combine the orange and lemon juice, sugar and the bruised lemon balm. Stir well to dissolve the sugar.
Place the jug in a cool place or in the refrigerator and leave it for 2 hours or until it is thoroughly chilled.
Add the soda water. Serve the drink in tall glasses each containing 2 or 3 ice
Served cold with cream, Lemon and Almond Flan is a delicious dessert.
Peel the oranges and remove all the white pith. With a large sharp knife slice the oranges very thinly. Place the orange and pepper slices in a shallow serving dish.
In a small mixing bowl beat together the oil, vinegar, sugar, salt and pepper. Mix in the lemon balm and pour the dressing over the orange and pepper slices. Leave the salad in a cool place or in the refrigerator for at least 2 hours before serving.
