Legumes are vegetables belonging to the leguminosae family.

Approximately 1,300 species make up this family and it is one of the largest cultivated food-producing sources.

Legumes have bi-valved pods with seeds attached along one join. Peas, beans, soya beans and lentils are legumes. The dried seeds of these vegetables are called pulses. They have been man’s staple foods for centuries. Pulses are high in protein, therefore they are very nutritious.
