Leek Vinaigrette

A simple and easy-to-make salad, Leek Vinaigrette makes an excellent accompaniment to cold meat or fish dishes.

6 lean bacon slices, grilled until crisp and diced

1 lb. cooked leeks, chopped

4 hard-boiled eggs, sliced

Attractive Leek Sausage is easy make, and be served or cold, for 1 tablespoon finely chopped fresh parsley small garlic clove, crushed

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried oregano

2 tablespoons tarragon vinegar

6 tablespoons olive oil

In a medium-sized salad bowl, combine the bacon, leeks and eggs. Set aside.

Place all the dressing ingredients in a screw-top jar. Screw on the lid firmly and shake well until all the ingredients are well blended.

Pour the dressing over the salad ingredients and toss well with two large spoons. Sprinkle over the parsley and serve immediately, or chill and serve.
