A quite fantastic concoction of fresh fruit, ice-cream and whipped cream, Knickerbocker Glory makes a spectacular end to a meal.
4 fresh peaches, peeled
8 oz. fresh strawberries, washed and hulled
8 fl. oz. vanilla ice-cream
8 fl. oz. chocolate ice-cream
4 tablespoons chocolate sauce
5 fl. oz. double cream
4 large cherries
With a sharp knife, halve and stone the peaches, then cut them into thin slices. Set aside.
Halve the strawberries. Place one-quarter of the strawberries in each of four tall sundae glasses.
Using an ice-cream scoop or large spoon, divide the vanilla ice-cream equally among the glasses. Top with a layer of peaches. Cover the peaches with the chocolate ice-cream. Spoon over the chocolate sauce.
In a medium-sized mixing bowl, whisk the cream with a wire whisk or rotary beater until it forms stiff peaks. Divide it equally among the four glasses.
Decorate each serving with a cherry and serve at once.
