A kid is a young goat. In butchery the term tetards is applied to very young kids – from 30 to 40 days old, while older kids – between 3 and 4 months old – are called broutards.
Kid can be sweet and tender, but it must be correctly prepared, as it has a tendency to be dry and lacking in flavour. TO counteract this, kid meat is frequently marinated before cooking, and herbs and seasonings are used in its preparation.
At one time kid was regarded as a delicacy, on a par with lamb. Today it is seldom eaten in Britain or America, although it is still regarded as a delicacy in some Mediterranean countries.
Kid is usually roasted although it may also be casseroled. It should be cooked in the same way as lamb.
