A mixture of potatoes and apples, Kartoffelmos med Aebler (kat-ofl-ehl-moos mayd ay-blah) is a simple country dish that goes particularly well with sausage or pork.4 oz. butter
2 lb. cooking apples, peeled, cored and sliced
2 tablespoons sugar grated rind of
½ teaspoon ground cinnamon
2 lb. potatoes, peeled and cut into
1 teaspoon salt
First make the apple puree. In a large saucepan, melt 2 ounces of the butter over moderate heat. When the foam subsides, add the apple slices, sugar, lemon rind, clove and cinnamon and cook for 10 to 15 minutes or until the apple slices are soft. Remove the pan from the heat and press the apple mixture through a fine strainer into a large mixing bowl. Taste the puree and add more sugar if necessary. Set aside.
Preheat the oven to fairly hot 400 °F (Gas Mark 6, 200°C).
Place the potatoes in a large saucepan. Add
1 teaspoon salt and enough water to cover. Bring the water to the boil over moderately high heat. Cover the pan, reduce the heat to low and simmer the potatoes for
20 minutes or until they are tender.
Remove the pan from the heat and drain the potatoes in a colander. Return the potatoes to the saucepan. Using a potato masher, mash the potatoes with the remaining butter until they are light and creamy.
Add the mashed potato to the apple puree and mix well. Taste the mixture and add more salt if necessary.
Spoon the mixture into a medium-sized baking dish and place it in the oven. Bake for 30 minutes or until the top is lightly browned.
