Kale with Onions and Italian Sausage makes a tasty light supper dish. Serve it with bread and butter.
2 lb. kale, washed, drained and chopped
1 ½ teaspoons salt
3 tablespoons olive oil
1 medium-sized onion, finely chopped
1 lb. Mortadella sausage, skinned and diced
2 teaspoon black pepper
Place the kale in a large saucepan. Add
1 teaspoon of the salt and enough water just to cover. Bring the water to the boil over moderately high heat. Reduce the heat to moderate and cook the kale for
15 minutes, or until it is tender.
Remove the pan from the heat and drain the kale in a colander, pressing down with the back of a wooden spoon to squeeze out all the water. Set aside and kep warm.
In a medium-sized frying-pan, heat the olive oil over moderate heat. Add the onion and cook it, stirring occasionally, for 5 to 7 minutes, or until it is soft and translucent but not brown. Add the sausage and cook, stirring frequently, for 3 minutes.
Stir in the kale, the remaining salt and the pepper and mix well with the sausage and onion. Cook for a further 3 to 5 minutes or until the mixture is thoroughly heated.
Transfer the mixture to a warmed serving dish and serve immediately.
