This simple, but extremely tasty, dish of pork chops flavoured with juniper berries is ideal for a family supper. Serve it with mashed potatoes and French beans and, to drink, a chilled Tavel rose wine.
4 large pork chops
2 garlic cloves, halved
1 teaspoon salt
½ teaspoon black pepper
20 juniper berries, crushed
4 tablespoons olive oil
Preheat the grill to high.
Rub each chop all over with half a garlic clove. Rub them with the salt and pepper and press the juniper berries into the meat.
Place the chops on a rack in the grill pan and brush them with the oil.
Reduce the heat to moderate and place the chops under the grill . Grill for about 10 minutes on each side, or until the meat is tender when pierced with the point of a sharp knife.
Transfer the chops to a warmed serving dish and serve at once.
