Jiffy Tuna Surprise

When you’re short of time and ideas, this is just the dish for a family supper. It may be prepared in very little time from just a few ingredients in your store cupboard. Serve it with rice or noodles.

2-3 SERVINGS

2 oz. butter

1 large onion, chopped

1 garlic clove, chopped

½ teaspoon curry powder

8 oz. canned, peeled tomatoes

8 oz. canned tuna fish, flaked

1 teaspoon dried basil

2 tablespoons sultanas or seedless raisins

2 teaspoon salt

½ teaspoon freshly ground black pepper

In a medium-sized saucepan, melt the butter over moderate heat. When the foam subsides, add the onion and garlic and fry for 5 minutes, or until the onion is soft and translucent but not brown. Stir in the curry powder and add the tomatoes with the can juice, tuna, basil, sultanas or seedless raisins, salt and pepper.

Bring to the boil, reduce the heat to low and simmer gently for 10 minutes.

Remove the pan from the heat and turn the mixture into a warmed serving dish. Serve at once.
