Incanestrato Cheese

A Sicilian cheese similar to PECORINO, Incanestrato is made from a combination of cow’s and goat’s milk. The cheese is pressed in wicker moulds or baskets, which imprint the cheese, hence the name (incanestrato, in Italian, means basketed).

Incanestrato cheese is sharp to taste and is mainly used, grated, as a garnish.
