Iced Coffee

Iced Coffee is ideal for an outdoor summer lunch or picnic. Vary the quantity of sugar to suit your taste. Another way of serving Iced Coffee is to chill the black coffee and float whipped cream on top just before serving.

The coffee is then drunk through a layer of cream, like Irish Coffee.

1 pint strong black coffee, hot

2 tablespoons sugar

10 fl. oz. single cream

In a medium-sized mixing bowl, mix to-gether the coffee and sugar, stirring until the sugar has dissolved.

Allow the coffee to cool to room temperature. Using a wire whisk or rotary beater, lightly whisk in the cream. Pour the coffee into a chilled 2-pint jug and chill in the refrigerator for 2 hours before serving.
