Hungarian Apple Salad

Hungarian Apple Salad is a delightfully fresh-tasting fruit and vegetable salad to serve with cold meats or fish.

4 medium-sized potatoes, cooked and chopped

1 small onion, thinly sliced and pushed out into rings

2 large red eating apples, washed, cored and diced

1 tablespoon seedless raisins

4 tablespoons olive oil

2 tablespoons white wine vinegar

1 teaspoon lemon juice

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon chopped fresh chives

In a medium-sized salad bowl, combine the potatoes, onion, apples and raisins.

In a small mixing bowl, combine the olive oil, vinegar, lemon juice, salt, pepper and chives, beating with a fork until they are well blended.

Pour the dressing over the vegetables and fruit and toss the salad well.

Chill the salad in the refrigerator for 30 minutes before serving.
