Hot Spiced Grapefruit

An unusual atid tasty way to serve grape-fruit, this easy to make dish can be served for breakfast, or as a first course to a dinner party.


2 oz. cup soft brown sugar

1 teaspoon ground allspice or mixed spice

1 teaspoon ground cinnamon

1 tablespoon butter, softened

1 tablespoon dark rum

2 large grapefruit, halved and flesh loosened

Preheat the grill to fairly hot. In a small mixing bowl, combine the sugar, allspice or mixed spice and cin-namon. Add the butter and rum and cream the mixture with a wooden spoon until it forms a smooth paste.

Using a flat-bladed knife, spread one-quarter of the sugar mixture over each grapefruit half.

Put the grapefruit on the grill rack and place them under the grill . Grill .for 6 to 8 minutes, or until the sugar mixture has melted and is bubbling.

Remove the grapefruit from the grill and transfer them to individual serving dishes.

Serve immediately.
