This tangy butter makes an excellent accompaniment to fried, grilled or poached fish.
4 oz. butter, softened
4 tablespoons grated fresh horseradish § teaspoon cayenne pepper
In a medium-sized mixing bowl, mash the butter, horseradish and cayenne together with a wooden spoon until the mixture is well blended.
Place the bowl in the refrigerator and chill for 30 minutes before serving.
