Horseradish and Sour Cream Sauce

This piquant sauce makes a superb ac-companiment to any fish or cold meat dish.

4 tablespoons grated fresh horseradish

1 tablespoon vinegar

5 fl. oz. sour cream

1 teaspoon sugar

½ teaspoon salt

½ teaspoon cayenne pepper

In a medium-sized mixing bowl, combine the horseradish, vinegar, sour cream, sugar, salt and cayenne with a wooden spoon.

Spoon the sauce into a sauceboat and chill in the refrigerator until you are ready to use it.
