Native to Mediterranean countries, the horseradish is a hardy perennial plant of the mustard family. It consists of a large white root with coarse green leaves.

The leaves are rarely used in cooking, but the root is used, grated or ground, fresh or cooked, in sauces and pickles and as a condiment. It has a pungent, rather peppery flavour.
