Quick, easy and economical to prepare, Honey Ginger Pudding is an ideal dessert for a family meal.
1 oz. plus
1 teaspoon butter
6 slices white bread, crusts removed and cut into
2 oz. preserved ginger , thinly sliced
3 tablespoons clear honey
1 egg, lightly beaten
8 fl. oz. milk
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C). Using the teaspoon of butter, grease a medium-sized pie dish.
Make layers of the bread and ginger in the dish.
In a medium-sized saucepan, heat the remaining butter and honey together over moderate heat.
Remove the pan from the heat and beat in the egg and milk. Pour the mixture over the bread and ginger and place the dish in the oven.
Bake for 40 to 45 minutes, or until the top of the pudding is golden brown.
Remove the dish from the oven and serve at once.
