A smooth dessert, Honey-Baked Pears are equally good hot or cold. Serve them with lots of whipped cream.
1 oz. plus
1 teaspoon butter
4 large firm pears, peeled, halved and cored
2 fl. oz. lemon juice
2 fl. oz. brandy
4 fl. oz. clear honey
½ teaspoon ground cinnamon
½ teaspoon grated nutmeg
Preheat the oven to moderate 350 °F (Gas Mark 4, 180°C).
Grease a medium-sized baking dish with the teaspoon of butter. Arrange the pear halves in the dish, cut sides down, and set aside.
In a small saucepan, warm the lemon juice, brandy and honey together over low heat, stirring the mixture with a wooden spoon until it is hot and smooth.
Stir in the cinnamon and nutmeg and remove the pan from the heat. Pour the mixture over the pears. Cut the remaining butter into small pieces and dot them over the mixture. Place the dish in the oven and bake the pears for 30 to 35 minutes or until they are tender but still firm.
Remove the dish from the oven and serve at once, or allow to cool before serving.
