An unusual home-made sweet , Honey and Walnut Bars wi/l be a great favourite with children.
1 teaspoon butter
4 oz. sugar
4 fl. oz. clear honey
4 tablespoons water
2 oz. plain cooking chocolate, broken into small pieces
5 oz. walnuts, chopped
8 oz. flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
2 teaspoon ground cinnamon
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
Lightly grease an oblong 10 x 14-inch baking tin with the butter. Set aside.
In a medium-sized saucepan, bring the sugar, honey and water to the boil over moderate heat, stirring constantly to dissolve the sugar.
Remove the pan from the heat and stir in the chocolate and walnuts. Continue stirring until the chocolate has melted. Set aside until the mixture is cool.
Sift the flour, baking powder, soda and cinnamon into a medium-sized mixing bowl.
Stir the chocolate and honey mixture into the flour mixture. Beat in the eggs and blend well. Turn the mixture into the greased baking tin.
Place the tin in the oven and bake for 35 minutes.
Remove the tin from the oven and, while the mixture is hot, cut it into bars with a knife.
When they are cold, remove the bars from the tin and store them in an airtight container.
