A deliciously refreshing mixture of tropical fruit juices and sour cream, this drink is an easy-10-make, non-alcoholic drink suitable for children.
2 sugar cubes
1 large orange, washed and dried
10 fl. oz. canned or bottled passion fruit juice 1 pint canned or bottled pineapple juice 1 small melon, halved and seeded 5 fl. oz. sour cream
Rub the sugar cubes all over the skin of the orange to extract the zest or oil. Discard the orange and place the sugar cubes in a large mixing bowl. Using the back of a spoon, crush the sugar.
Pour over the passion fruit and the pineapple juices. Set the mixture aside.
Using a sharp-edged metal spoon, scoop out the flesh of the melon and discard the skin. Using the back of a wooden spoon, rub the melon flesh through a very fine wire strainer into the mixing bowl. Alternatively, puree the melon flesh in a blender.
Pour the mixture into a large jug and place it in the refrigerator to chill for 30 minutes. Just before serving, stir in the sour cream and float 4 large ice cubes on top.
