This Israeli version of Haroset is moistened with red wine and bound with matzo meal. It is reminiscent of the mortar on which the Jews worked when captive in Egypt.
3 large apples, peeled, cored and chopped
5 bananas, peeled and chopped
1 lb. dates, stoned and chopped
8 oz. groundnuts, finely chopped
1 teaspoons ground cinnamon
2 teaspoons ground ginger
1 tablespoon grated lemon rind
1 tablespoon grated orange rind
4 fl. oz. dry red wine
8 oz. matzo meal
In a large mixing bowl, combine the apples, bananas, dates, groundnuts, cin-namon, ginger and lemon and orange rinds. With a fork or wooden spoon, mash them to a paste. Add the wine and stir it in well.
Add enough matzo meal to this mixture to make a stiff paste. Roll the paste between your hands to form small balls.
Arrange the balls on a plate.
