Harlequin is the name given to a decora-tive technique in cookery in which food is garnished with the harlequin colours of black, red, yellow and green. This technique can be applied to both sweet and savoury dishes.

Examples of this colourful garnish are strips of carrot, cucumber and ham to decorate a roasted joint, and chopped candied peel, angelica, pineapple and cherries on a sweet dish.
