These are American commercially grown dried white beans. The beans should be soaked in cold water for 2 hours or over- night and drained before cooking. To cook the beans, put them in a medium-sized saucepan. Pour over enough water to cover them and bring to the boil over moderate heat. Skim off any scum that rises to the surface of the water. Add 1 chopped carrot, 1 chopped onion, 1 crushed garlic clove and, if you like, 1 slice of bacon chopped with a little salt and pepper.
Cover the pan and simmer for about 1 hour or until the beans are tender. Drain the bean mixture and turn it into a heated serving dish. Serve immediately.
