Hamaguri ShigureNi (hah-mah-gur-ee shee-gur-ee-nee) is a subtly flavoured Japanese delicacy. Serve it as an hors d’oeuvre to a Japanese meal. Cockles may be substituted if clams are difficult to obtain.
Clams flavoured with sake and soy sauce, Hamaguri ShigureNi is a delectable Japanese delicacy.
2 fl. oz. sake
2 tablespoons sugar
12 clams, removed from their shells
2 tablespoons soy sauce
In a large heavy frying-pan, combine the sake, sugar and clams. With a wooden spoon stir the mixture thoroughly. Bring the mixture to the boil over high heat and boil it for 3 minutes, stirring constantly. Stir in the soy sauce and cook for 1 minute, still stirring.
With a slotted spoon, remove the clams from the pan and set them aside.
Continue boiling the sauce in the frying-pan for a further 10 minutes or until it becomes thick and syrupy. Return the clams to the pan and stir them gently into the sauce. Cook the mixture, stirring constantly, for 1 minute or until the clams are thoroughly coated with the sauce.
Remove the pan from the heat and spoon the clams into four warmed serving dishes. Spoon over the sauce and serve immediately.
