Ham with Figs

This Italian hors d’oeuvre can be prepared in an instant and then chilled until required. The salty flavour of the Italian ham contrasts well with the fresh fruit and it can be bought, freshly sliced, from most delicatessens. The figs should be fresh, but canned figs may be used. Drain them well and dry on kitchen paper towels.

8 fresh figs, wiped clean

8 thin slices prosciutto

Make a cut in each fig, downwards from the stalk, but do not cut completely through. Roll up the ham strips and place one roll in each cut.

Arrange the figs on a serving dish and chill in the refrigerator for at least 30 minutes before serving.
