The gurnet, or gurnard as it is sometimes called, is a small, white-fleshed fish of the Trigla family. There are several types of edible gurnet, the best being the red gurnet, which is in season from July through April. The grey gurnet is also edible.

Most recipes for red mullet or haddock are suitable for both red and grey gurnet.
