If you imagine sausage rolls are tubes of pastry stuffed with pork sausage meat, think again! Here is an Italian version, crisp rolls topped with mortadella sausage and green peppers, sprinkled with Parmesan cheese and grilled .
3 large green peppers, halved, white pith removed and seeded
1 teaspoon salt
½ teaspoon dried basil
1 teaspoons olive oil
Italian bread rolls, halved
6 slices mortadella sausage
2 oz. Parmesan cheese, grated
Preheat the grill to moderate.
Arrange the halved green peppers, skin sides up on the grill rack and grill for 15 minutes on each side, or until the peppers are light brown and tender. Transfer the peppers to a heated dish, sprinkle with the salt and basil and keep warm.
In a small saucepan, heat the oil over moderate heat. Remove the pan from the heat.
Place the rolls, cut sides up, on the grill rack. Top each with a slice of sausage and a pepper half. Sprinkle Parmesan cheese over the top of each roll and drip the hot oil on top. Place the prepared rolls under the grill . Grill for 4 minutes, or until the cheese topping is golden. Remove from the heat and serve at once.
