Grilled Fruit Salad Packets

These refreshing little packets of hot fresh fruit may be served on their own, in the aluminium foil, or to accompany ice-cream.

1 sweet apple, peeled, cored and chopped

1 large orange, peeled, pith removed and separated into segments

1 small pineapple, prickly skin and core removed and chopped

4 oz. seedless grapes, halved

3 tablespoons raisins soaked in

2 tablespoons brandy

2 tablespoons castor sugar

½ teaspoon vanilla essence

Cut out four 8-inch squares of aluminium foil. Set aside.

Preheat the grill to moderate.

In a medium-sized bowl, mix together the apple, orange, pineapple, grapes, raisins and brandy, sugar and vanilla essence.

Holding a square of foil in your hand, press down the centre into your palm to form a cup-shape. Spoon one-quarter of the fruit mixture into the foil cup and fold the sides up and over to seal the top. Make the remaining three packets in the same way.

Place the packets on the grill pan and grill them for 15 minutes or until the foil is very hot on the bottom. Remove the packets from the heat and transfer them to warmed serving dishes. Serve immediately.
