There are numerous species of grey mullet, streamlined fish which are found along the Mediterranean coast and also in British and North American waters. The fish have small mouths and feed on organic material. Their diet determines their taste, so the quality of the fish varies, though grey mullet is generally claimed to have an excellent flavour, with relatively few of those irritating small bones which plague the palate. The fish, which average 2 to 4 pounds in weight, are usually sold whole. Small grey mullet are best charcoal grilled , but the larger fish may be baked or poached.
