This piquant and pungent relish from Mexico is an ideal accompaniment to curry, kebabs or a pilaf.
1 garlic clove, crushed
1 small onion, very finely chopped
6 tomatoes, blanched, peeled and finely chopped
6 green chillis, seeded and finely chopped
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil
1 tablespoon white wine vinegar
In a medium-sized mixing bowl, combine the garlic, onion, tomatoes and green chillis.
In a cup, mix together the salt, pepper, olive oil and vinegar. Pour the oil and vinegar mixture over the vegetables. Stir to mix well and serve.
