Grapefruit Jelly

A delicious dessert, Grapefruit Jelly is simple economical to make. Serve with cream, or a light cold Creme a la Vanille.

1 large grapefruit, peeled, white pith removed and segmented

6 cherries, halved and stoned

1 medium-sized green apple, cored and chopped

1 ½ tablespoons sugar

½ teaspoon ground ginger

10 fl. oz. grapefruit juice

4½ oz. packaged lemon jelly

10 fl. oz. ginger ale

Place the grapefruit, cherries and apple in a medium-sized mixing bowl and sprinkle on the sugar and ginger. Stir well with a spoon or fork to blend the ingredients together.

In a small saucepan, bring the grape-fruit juice to the boil over high heat. Remove the pan from the heat and add the lemon jelly to the pan, stirring constantly until it dissolves in the liquid. When the jelly has dissolved, pour in the ginger ale and stir to mix well. Place the jelly mixture in the refrigerator and chill for 15 minutes, or until it is slightly thick.

Remove from the refrigerator and pour the mixture into a 2-pint mould. Stir in the fruit mixture and mix well.

Place the mould in the refrigerator and chill for 1 hour, or until the mould has completely set.

Serve cold.
