A deliciously refreshing drink, Grapefruit Barley Water is easily made at home and it is sure to be popular with the children.
2 oz. pearl barley
1 pint water
4 tablespoons sugar
4 fl. oz. fresh or canned grapefruit juice
Place the pearl barley in a medium-sized saucepan and just cover it with cold water. Place the pan over moderately high heat and bring the water to the boil. Cook the barley for 5 minutes. Remove the pan from the heat and drain the barley in a fine strainer. Wash the barley thoroughly under cold running water.
Return the barley to the saucepan and add the 1 pint of water. Place the pan over moderately high heat and bring the water to the boil. Reduce the heat to low, cover the pan and simmer the barley for 50 minutes, or until it is tender.
Remove the pan from the heat and strain the liquid into a large jug or bowl, discarding the barley. Add
2 tablespoons of sugar to the liquid, stir well and set it aside to cool for
10 minutes. Place the jug or bowl in the refrigerator to chill for
30 minutes, or until it is very cold.
Remove the jug or bowl from the refrigerator and stir in the grapefruit juice and the remaining sugar. Return the jug or bowl to the refrigerator and chill the barley water for a further 30 minutes, stirring occasionally.
