A delightful and refreshing side dish, Grapefruit and Orange Salad goes particularly well with glazed ham or roasted lamb.
2 medium-sized grapefruit, peeled
1 large orange, peeled
J small cucumber fresh mint leaves
3 tablespoons corn oil
2 teaspoon lemon juice
1 teaspoon sugar
1 teaspoon black pepper
½ teaspoon salt
With a sharp knife, separate the grape-fruit and orange into segments and place them in a shallow, medium-sized salad bowl.
Cut the cucumber, lengthways, then into 4,-inch slices, crosswise. Arrange them decorativcly around the grapefruit mixture. Set aside.
In a small bowl, combine all the dressing ingredients, beating with a fork until they are well blended. Pour the dressing over the salad and decorate with the mint leaves. Chill the salad in the refrigerator for at least 30 minutes before serving. makes excellent accompaniment glazed or roast
