Grapefruit and Avocado Salad

A delightfully fresh-tasting dish, Grapefruit and Avocado Salad may be served as an unusual first course to a summer dinnerparty.

2 large ripe avocados, halved and stoned

2 teaspoons lemon juice

1 large grapefruit, peeled and chopped head of chicory , trimmed, washed and chopped

1 teaspoons sugar

1 tablespoons French Dressing

Using a teaspoon, scoop out the avocado flesh and place it in a medium-sized mixing bowl. Reserve the avocado shells.


1 teaspoon of the lemon juice, the chopped grapefruit, chicory and sugar and, using a fork, mash the ingredients until they form a relatively smooth mixture.

Stir the dressing into the avocado mix-ture. Spoon the mixture into the avocado shells and sprinkle over the remaining lemon juice. Place the filled avocados in the refrigerator to chill for at least 30 minutes.

Serve cold.
