Gooseberry Crumble

Quick and easy to make, Gooseberry Crumble is a filling, warming dessert for a family supper. Serve it with Crime a la

Vanille or cream.

1 teaspoon butter

½ lb. gooseberries, trimmed and washed

4 oz. sugar

2 tablespoons water

4 oz. flour

3 oz. butter, cut into small pieces 2 oz. sugar

Preheat the oven to moderate 350°F (Gas Mark 4, 180°C). Using the teaspoon of butter, lightly grease a medium-sized baking dish.

Arrange the gooseberries in the dish and sprinkle them with the sugar and water.

Sift the flour into a medium-sized mixing bowl. With your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs. Stir in the sugar.

Cover the gooseberries with the crumble mixture and place the dish in the oven. Bake for 45 minutes, or until the crumble is golden brown.

Remove the dish from the oven and serve at once.
