These delightful Golden Biscuits , topped with yellow glace cherries, have a rich nutty flavour and will make an attractive addition to the tea table.
4 oz. plus
1 teaspoon butter
3 oz. castor sugar
½ teaspoon vanilla essence
5 oz. flour
2 tablespoons finely chopped walnuts
2 oz. light brown sugar
15 yellow glace cherries, halved
Preheat the oven to fairly hot 375 °F (Gas Mark 5, 190°C). With the teaspoon of butter, grease a large baking sheet and set it aside.
In a medium-sized mixing bowl, cream the remaining butter and the sugar together with a wooden spoon until the mixture is light and fluffy. Beat in the egg and vanilla essence with 1 tablespoon of the flour. When the mixture is smooth, add the remaining flour and the walnuts. Knead the mixture with your hands to form a stiff dough. If the dough is too sticky, add a little more flour.
Shape the dough into a ball. Wrap it in greaseproof or waxed paper and place it in the refrigerator to chill for 30 minutes.
On a lightly floured board, roll out the dough to a circle about g-inch thick. Using a 2-inch round pastry cutter, cut the dough into circles. Sprinkle the light brown sugar on top of the circles, pressing it down lightly with your fingers to make it stick. Press a cherry half lightly into the middle of each circle.
Transfer the circles to the prepared baking sheet and place it in the centre of the oven. Bake for 10 to 15 minutes, or until the biscuits are cooked and golden.
Remove the biscuits from the oven and transfer them to a wire rack to cool completely before serving.
