A la godard (ah lah goh-dahr) is a classic French garnish for poultry entrees or second course dishes consisting of large cuts of meat. The garnish is made from truffles, mushrooms, plain or stuffed sweetbreads, cocks’ combs, kidneys and large or small QUENELLES.

Godard is also a classic French sauce, composed of Champagne, mixed diced vegetables, DEMI GLACE SAUCE and mushroom essence. The sauce accompanies sweetbread and fish dishes.
