Gloucester Cheese

Gloucester is a fine English cheese of which there are two types, Single and Double Gloucester. Only the latter is now made commercially.

Double Gloucester is flat and round with a close, crumbly texture. It is a mel-low, delicate cheese not unlike a Cheshire but considered by some to be superior.

Single Gloucester, similar in shape and quicker to mature, does not have quite the same texture or flavour.
