To glaze is to make food shiny and glossy. A glaze is used primarily to improve the appearance of a dish, but it can also improve the flavour. Different ingredients and methods are used for different dishes. A sweet or savoury pie is glazed with beaten egg or milk before baking. A jam glaze is usually made from apricot jam or redcurrant jelly. It is brushed over cakes and fruit flans.
A meat glaze is made by reducing a strong meat and bone stock to a thick brown syrup. This syrup may be added to a gravy or sauce, or melted down and brushed over cold meats, such as a galantine, brawn or tongue.
