Ginger and Cream Wafers

Crisp ginger biscuits sandwiched together with lemon-flavoured cream, Ginger and Cream Wafers are really delicious and very easy to make. Do not fill the biscuits until they are ready to be served, or they will lose their crispness.

4 oz. plus

2 teaspoons butter, softened

2 oz. castor sugar

2 oz. {% cup light brown sugar

2 tablespoons black treacle

1 tablespoon honey legg

12 oz. flour

1½ teaspoons ground ginger

10 fl. oz. double cream

1 teaspoon grated lemon rind

1 tablespoon castor sugar

Preheat the oven to moderate 350°F (Gas Mark 4, 180°C). Using half a teaspoon of the butter for eacn baking sheet, grease two large baking sheets and set them aside.

In a medium-sized mixing bowl, cream 4 ounces of the butter and the sugars together with a wooden spoon until the mixture is light and fluffy. Stir in the treacle and the honey.

Beat in the egg. Sift in the flour and the ginger and fold them into the butter and sugar mixture.

With your hands, mix and knead the dough until it is smooth.

Shape the dough into a ball, wrap it in greaseproof or waxed paper and place it in the refrigerator to chill for 30 minutes.

Remove the dough from the refriger-ator. Place the dough on a floured board or flat surface and roll it out to i’0-inch thick.

With a 22-inch round pastry cutter, cut the dough into circles. Place half of the circles on the prepared baking sheets.

Place the baking sheets in the oven and bake the wafers for 10 to 12 minutes, or until they are just firm to the touch.

Remove the wafers from the oven and transfer them to a wire rack to cool com-pletely. Grease the baking sheets with the remaining teaspoon of butter and bake the remaining circles in the same way.

Meanwhile, make the filling. Pour the cream into a medium-sized mixing bowl. Using a wire whisk or rotary beater, beat the cream until it forms soft peaks. Add the lemon rind and sugar. Continue beating until the cream mixture forms stiff peaks.

Spread half the wafers with equal amounts of the cream mixture. Cover with the remaining wafers. Arrange them on a serving plate and serve.
