A long and slender salt-water fish found in most European waters, the garfish, also called the gar and garpike, is noted for its bones which turn bright green when cooked. Don’t let this put you off, however, because the fish is well worth eating, especially when filleted. It can be cooked in a variety of ways – fried, stewed, steamed and cooked with vegetables.
