All bean seeds serve as haricots. The pods should be left on the plants until the seed is ripe; or taken under cover, where air circulates freely and sun can reach, until the pods have yellowed. The seed is then shelled out, exposed to air to complete drying and then stored in bags or boxes. Haricot Beans in the section EASY HOME PRESERVATION OF VEGETABLES.
