This simple and very tasty dish of gammon steaks with a highly flavoured tomato sauce is ideal for a quick family supper.
Serve the steaks with mashed potatoes and Brussels sprouts.
4 thick gammon steaks
1 teaspoon dried sage
4 tablespoons vegetable oil
2 large onions, sliced and pushed out into rings
2 garlic cloves, crushed large green pepper, white pith removed, seeded and cut into thin strips
1 lb. fresh tomatoes, blanched, peeled, seeded and chopped, or
2 lb. canned peeled tomatoes, drained and chopped
4 tablespoons tomato puree
1 teaspoon salt teaspoon black pepper
2 teaspoons sugar
½ teaspoon dried sage
First prepare the sauce. In a large frying-pan, heat the oil over moderate heat. When the oil is hot, add the onions and garlic and fry for 5 minutes, stirring frequently.
Add the green pepper and fry for a further 3 minutes.
Add the tomatoes, tomato puree, salt, pepper, sugar and sage and stir well. Reduce the heat to low, cover the pan and simmer for 30 minutes, or until the tomatoes are very soft and pulpy.
Preheat the grill . Grill for 5 minutes on each side.
Arrange the steaks on a warmed serving dish and pour over the sauce. Serve at once.
