This lightly flavoured chicken dish makes an easily prepared lunch or dinner meal. Serve it with a mixed salad and to
drink a white Toscano Bianco.
4-6 SERVINGS
8 chicken breasts, skinned and boned 2 teaspoon salt
2 teaspoon black pepper
3 oz. butter
1 tablespoon olive oil
3 tablespoons lemon juice
4 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil, or
1 teaspoon dried basil
Sprinkle the chicken breast halves with the salt and pepper.
In a large frying-pan heat the butter and olive oil together over moderate heat. When the foam subsides add the chicken
pieces and cook them for 15 minutes, turning each piece at least once during the cooking period. Transfer them to a warmed
serving dish.
Add the lemon juice to the juices in the pan and stir well. Add the parsley and basil and cook for 1 to 2 minutes, stirring constantly. Pour the sauce pver the chicken and serve hot.
