Cheddar Spread

A tangy spread, served on buttered toast or crackers, this is suitable for a light supper snack, or for canapes at a buffet or cocktail party.

16 4 oz. Cheddar cheese, grated 6 fl. oz. sour cream

3 tablespoons sherry

Combine the cheese, sour cream and sherry in a medium-sized bowl. With a wooden spoon, beat vigorously until the mixture

is light and fluffy. Seasonings, such as Tabasco sauce, may be added if you like a spicier mixture.
