A French term which means ‘hot-cold,’ Chaudfroid (show-fwah) is the name of a sauce which is used to coat poultry, fish or meat. It can be white or brown and has the addition of aspic jelly to make it thick and shiny. Chaudfroid dishes are served cold and garnished with colourful pieces of vegetables.
