A Charlotte is a pudding encased in a circle of bread, cake or biscuits , enclosing a sweet filling. There are two main

types of charlotte: Charlotte Russe, a cold sweet which consists of a rich custard and whipped cream mixture set with

gelatine and enclosed in sponge fingers, and Fruit Charlotte, served hot, which consists of a fruit filling and thin

buttered slices of bread. A savoury type of charlotte – usually cheese-flavoured -is also sometimes made.
