Char

A member of the salmon family, this fish is recognizable by its red belly. Char are found in fresh water, in Iceland, some

English lakes and Scottish lochs. They are identical to or closely related to the omble chevalier found in Swiss and Savoy

lakes. In the United States the name ‘char’ is given to some species of trout. Char can be cooked by any method suitable

for trout.
