An elegant and simple appetizer, Celery with Red Caviar takes only minutes to prepare and can be made an hour or so before
serving. It can be accompanied, in separate dish, by black olives.2 small heads of celery (or about
10 stalks) 8 oz. full-fat cream cheese
2 tablespoons chopped chives
2 tablespoons chopped fresh parsley 3j oz. jar red caviar 2 teaspoon white pepper
Clean the celery and, on a chopping board, cut each stalk in three, crosswise. Set aside in a serving dish.
In a medium-sized mixing bowl, combine the cream cheese, chives, parsley, red caviar and pepper, beating to blend well.
Spread a little of the cream cheese mixture on to each celery piece and refrigerate for 30 minutes before serving.
